Between low-temperature cooking and the Rolls-Royce of ovens, there are distillers and extractors, blast chillers, and refrigerators to regulate the cold chain. The result: at Maso Zambo, we have invented a new type of cuisine, gastronomic yes, but rural.
The vegetable garden throughout the seasons, aromatic herbs, farmyard animals, eggs, fresh pasta, seasonal goat, freshwater fish, trout tartare, offal prepared in a wide variety of ways. Whenever possible, the ingredients are produced on the farm. Otherwise, we source them locally with meticulous attention to quality.
